Ingredients

  • 4 tb ground flax
  • ½ cup hot water
  • 5 tb coconut oil
  • 1 tb maple syrup (optional)
  • ½ cup coconut flour
  • ¼ cup almond flour
  • ¾ cup arrowroot flour
  • 1 tsp baking soda
  • ¼ tsp xanthan gum
  • pinch sea salt
  • 2 tb pumpkin seeds (optional)
  • 2 tb sunflower seeds (optional)
  • ¼ cup warm water

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Mix the ground flax and hot water in a small bowl and let it thicken.
  4. In a medium bowl, combine coconut flour, almond flour, arrowroot flour, baking soda, salt, and xanthan gum.
  5. Add the maple syrup and coconut oil to the flax and water mixture, mixing until smooth.
  6. Combine the wet mixture with the dry ingredients.
  7. Add warm water and optional seeds to the dough and mix well.
  8. Form a ball with the dough and divide it into four smaller balls.
  9. Press a thumb into the center of each ball to shape it into a bagel.
  10. Place the bagels on the prepared baking sheet and bake for 20 minutes.
