Ingredients

The bagel mixture

  • ½ cup coconut flour
  • 4 tbsp ground flax seed
  • 3 eggs
  • 3 tbsp melted coconut oil
  • ¾ cup pumpkin purée
  • cup non-dairy milk of choice
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • pinch sea salt

Optional sweetener

  • 2 tbsp maple syrup or honey

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare silicone donut pans.
  3. In a bowl, whisk together the eggs, melted coconut oil, pumpkin purée, non-dairy milk, and maple syrup if using.
  4. Add the coconut flour, ground flax seed, pumpkin pie spice, baking soda, and sea salt to the mixture and combine well.
  5. Scoop the mixture into each donut cavity, using fingers to shape if necessary.
  6. Bake for 20-25 minutes.
  7. Remove from the oven and enjoy.
