Paleo Cinnamon Sugar Bagels

Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- Boil a large pot of water.
- In a blender or stand mixer, combine all dough ingredients except for coconut sugar and blend until a ball forms.
- Separate the dough into four equal parts.
- Form each part into a bagel shape and drop them into the boiling water.
- Once the bagels float to the top (after about one minute), transfer them to the baking sheet.
- Brush each bagel with an egg wash and sprinkle with coconut sugar and a little cinnamon.
- Bake for 23-25 minutes.
