Paleo Cinnamon Sugar Bagels

Ingredients

  • 1 cup cassava flour
  • 1 cup arrowroot flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 tbsp coconut sugar
  • 4 medium eggs
  • ¼ cup olive oil
  • 2 tbsp maple syrup
  • 1 tbsp water
  • pinch sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Boil a large pot of water.
  4. In a blender or stand mixer, combine all dough ingredients except for coconut sugar and blend until a ball forms.
  5. Separate the dough into four equal parts.
  6. Form each part into a bagel shape and drop them into the boiling water.
  7. Once the bagels float to the top (after about one minute), transfer them to the baking sheet.
  8. Brush each bagel with an egg wash and sprinkle with coconut sugar and a little cinnamon.
  9. Bake for 23-25 minutes.
