Ingredients

The dough

  • 1 cup cassava flour
  • 1 cup arrowroot flour
  • 4 medium eggs
  • ¼ cup olive oil
  • 2 tbsp maple syrup
  • 1 tbsp water
  • 1 tsp baking powder
  • a pinch sea salt

The toppings

  • to taste Everything But The Bagel Seasoning

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Bring a large pot of water to a rolling boil.
  3. In a blender or food processor, combine all dough ingredients except the toppings and blend until a dough forms.
  4. Transfer the dough to a bowl and form it into a ball, adding more cassava flour if it's sticky.
  5. Divide the dough into four equal parts and shape each into a bagel.
  6. Gently drop each bagel into the boiling water; they are ready when they float to the top.
  7. Carefully lift the bagels out and place them on the baking sheet.
  8. Whisk the extra egg and brush it over each bagel.
  9. Sprinkle with your chosen toppings and bake for 23-25 minutes.
  10. Let cool for a few minutes before enjoying.
