Paleo Strawberry Bagels

Ingredients

The dough

  • 1 cup cassava flour
  • 1 cup arrowroot flour
  • 4 medium eggs
  • ¼ cup olive oil
  • 2 tb maple syrup
  • 1 tb water
  • 1 tsp baking powder
  • 1 tsp cinnamon

The filling

  • ¼ cup fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. Boil a large pot of water.
  4. Chop the strawberries into small pieces and set aside.
  5. In a stand mixer, combine cassava flour, arrowroot flour, four eggs, olive oil, maple syrup, water, baking powder, and cinnamon.
  6. Mix until the dough is thick and sticky.
  7. Add the chopped strawberries and mix until incorporated.
  8. Wet your hands lightly and form the dough into balls.
  9. Divide the dough into four to six equal parts based on desired bagel size.
  10. Drop each bagel into the boiling water; they are ready when they float (about one minute).
  11. Transfer the bagels to the baking sheet.
  12. Whisk the remaining egg and brush it over each bagel for an egg wash, if desired.
  13. Bake for 23-25 minutes.
  14. Enjoy your bagels!
