Paleo Strawberry Bagels

The filling

fresh strawberries, chopped
Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- Boil a large pot of water.
- Chop the strawberries into small pieces and set aside.
- In a stand mixer, combine cassava flour, arrowroot flour, four eggs, olive oil, maple syrup, water, baking powder, and cinnamon.
- Mix until the dough is thick and sticky.
- Add the chopped strawberries and mix until incorporated.
- Wet your hands lightly and form the dough into balls.
- Divide the dough into four to six equal parts based on desired bagel size.
- Drop each bagel into the boiling water; they are ready when they float (about one minute).
- Transfer the bagels to the baking sheet.
- Whisk the remaining egg and brush it over each bagel for an egg wash, if desired.
- Bake for 23-25 minutes.
