Instructions
- 1. Mix pumpkin, yogurt, flour, cinnamon, nutmeg, and maple syrup in a bowl until a dough forms.
- 2. Flour your hands and remove the sticky dough from the mixing bowl.
- 3. Knead the dough briefly and shape it into a circle, then cut into 4 equal sections.
- 4. Roll each section into a ball and poke a hole in the center.
- 5. Place dough in a donut pan or on a parchment-lined baking sheet, brush with egg white, and sprinkle with oats.
- 6. Bake at 375°F for 25 minutes.
- 7. Allow to cool for at least 20 minutes before slicing and toasting.
