Ingredients

The dough

  • 4 cups unbleached all-purpose flour
  • 2 teaspoons kosher salt
  • 2 teaspoons sugar
  • teaspoons instant yeast
  • 2 cups lukewarm water

For greasing

  • as needed tablespoons softened unsalted butter

Instructions

  1. Whisk together the flour, salt, sugar, and instant yeast in a large bowl.
  2. Add the lukewarm water and mix until a sticky dough ball forms.
  3. Cover the bowl and let the dough rise in a warm spot for 1 to 1½ hours until doubled in size.
  4. Preheat the oven to 425°F and grease two 1-quart oven-safe bowls with butter.
  5. Deflate the dough and separate it into two equal pieces.
  6. Transfer each half into the prepared bowls and let them rise for 10 to 20 minutes.
  7. Bake the dough for 15 minutes, then reduce the heat to 375°F and bake for an additional 17 to 20 minutes.
  8. Remove from the oven and let cool for 15 minutes before cutting.
