Ingredients

The dough

  • 4 cups gluten-free flour
  • 2 teaspoons kosher salt
  • 2 ¼ teaspoons instant yeast
  • 2 cups lukewarm water
  • 2 tablespoons honey
  • 2 eggs lightly beaten
  • 2 tablespoons olive oil or other neutral oil
  • 1 teaspoon white wine or cider vinegar

For greasing

  • softened unsalted butter for greasing

Instructions

  1. Whisk together the flour, salt, and instant yeast in a large bowl.
  2. In a medium bowl, dissolve the honey in the lukewarm water, then add the eggs, oil, and vinegar.
  3. Combine the wet and dry ingredients to form a batter.
  4. Grease two 1-quart oven-safe bowls with softened butter.
  5. Divide the dough evenly between the bowls and smooth the surface with wet hands.
  6. Let the dough rise in a warm place for 30 to 45 minutes, or until it crowns the rims of the bowls.
  7. Preheat the oven to 425°F halfway through the rising time.
  8. Bake the dough for 15 minutes, then reduce the heat to 375°F and bake for an additional 17 to 20 minutes until golden.
  9. Remove from the oven and let the loaves cool for at least 20 minutes before slicing.
