Double-Crusted Plum Crisp

The Plum Filling

thinly sliced plums, pit removed

Instructions
- Preheat the oven to 350°F and spray an 8x8 baking dish with cooking spray.
- In a medium bowl, mix the flour, oats, brown sugar, cinnamon, and salt. Stir in the melted butter until moist, then press half of the mixture into the baking dish.
- In a large bowl, combine the plums, granulated sugar, cornstarch, lemon juice, and vanilla, stirring until the plums are well coated.
- Spread the plum mixture evenly over the bottom layer of the crisp, then sprinkle the remaining crisp mixture on top and gently pat it down.
- Bake for 45 minutes until the crisp is golden and the fruit is bubbling. Let cool for 20 minutes before serving.
