Ingredients

The Crisp

  • 1 ⅓ cups all-purpose flour
  • 1 cup rolled oats
  • ¾ cup packed brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 10 tablespoons unsalted butter, melted

The Plum Filling

  • 4 cups thinly sliced plums, pit removed
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and spray an 8x8 baking dish with cooking spray.
  2. In a medium bowl, mix the flour, oats, brown sugar, cinnamon, and salt. Stir in the melted butter until moist, then press half of the mixture into the baking dish.
  3. In a large bowl, combine the plums, granulated sugar, cornstarch, lemon juice, and vanilla, stirring until the plums are well coated.
  4. Spread the plum mixture evenly over the bottom layer of the crisp, then sprinkle the remaining crisp mixture on top and gently pat it down.
  5. Bake for 45 minutes until the crisp is golden and the fruit is bubbling. Let cool for 20 minutes before serving.
