Ingredients

The chicken

  • 4 pieces thin boneless skinless chicken breasts
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 2 teaspoons sugar
  • 2 cloves minced garlic
  • 2 teaspoons dried Italian herb seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

The avocado ranch spread

  • 1 cup sour cream
  • 1 piece ripe avocado
  • 2 teaspoons lemon juice
  • 1 tablespoon roughly chopped fresh dill
  • 2 tablespoons roughly chopped fresh parsley
  • 1 tablespoon sliced green onions
  • to taste salt and pepper

The sandwich

  • 4 pieces sandwich rolls
  • 8 slices cooked bacon
  • 3-4 pieces heirloom tomatoes
  • 1 cup microgreens or romaine/butter lettuce

Instructions

  1. Marinate the chicken in a mix of olive oil, lemon juice, sugar, garlic, Italian herb seasoning, salt, and pepper for at least 1 hour.
  2. Grill the chicken for 6-8 minutes per side until cooked, then slice into thin strips.
  3. In a food processor, blend the ingredients for the avocado ranch spread until smooth.
  4. Slice the sandwich rolls in half and toast if desired.
  5. Spread the avocado ranch sauce on the bottom half of the rolls.
  6. Layer with bacon, sliced chicken, tomatoes, and greens.
  7. Top with more ranch spread if desired, and place the top half of the roll on.
