Ultimate Grilled Chicken Sandwich

Ingredients

Marinade

  • 16 ounces boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 2 tablespoons sweet onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 2 tablespoons bourbon (optional)

Sandwich Assembly

  • 4 ounces sharp cheddar, shredded
  • 8 slices bacon, cooked and drained
  • 4 slices tomato
  • 4 slices seeded hamburger buns

Instructions

  1. Heat olive oil in a pan and sauté chopped onion and garlic for 1-2 minutes.
  2. Add balsamic vinegar, tomato paste, and honey to the pan, bring to a boil, then remove from heat and thin with water.
  3. In a ziplock bag, combine chicken, olive oil, salt, pepper, paprika, and half of the honey balsamic sauce. Refrigerate for 1-2 hours.
  4. Cook bacon in a 350°F oven for 20 minutes and set aside.
  5. Shred cheddar cheese and slice tomatoes.
  6. Preheat the grill to 350-450°F.
  7. Brush chicken with remaining honey balsamic sauce and grill for 3-4 minutes on each side until cooked through.
  8. Assemble the sandwich by placing grilled chicken on a tray and topping with tomato, bacon, and cheddar.
  9. Melt the cheddar on the grill or in the oven, then place the finished chicken on buns and serve.
