Spicy Maple Grilled Chicken Sandwich

Ingredients

The chicken

  • 1 pound boneless skinless chicken tenders
  • ½ cup real maple syrup
  • 1 tablespoon sambal oelek (spicy chili sauce)
  • 2 tablespoons extra virgin olive oil
  • kosher to taste salt
  • kosher to taste pepper

The toppings

  • 4 slices thick cut bacon, chopped
  • 4 ears corn, kernels removed from the cob (about 4 cups total)
  • 1 teaspoon smoked paprika
  • ¼ cup fresh basil, chopped
  • 2 green onions, chopped
  • ½ cup shredded cabbage
  • ½ cup fresh blueberries
  • 4 rolls ciabatta, toasted
  • ½ cup plain Greek yogurt
  • ¼ cup basil pesto
  • 1 sliced avocado

Instructions

  1. Combine maple syrup, sambal oelek, olive oil, and salt in a bowl.
  2. Place chicken in a ziplock bag and pour half of the maple mixture over it. Let it sit for 10 minutes.
  3. Cook bacon in a skillet until crisp, then add corn, paprika, salt, and pepper. Cook for 5 minutes, then stir in basil and green onions. Remove from heat and mix in cabbage and blueberries.
  4. Preheat grill to medium heat and oil the grates.
  5. Grill chicken for 5-8 minutes per side, basting with the reserved maple mixture until cooked through. Drizzle remaining maple mix over chicken after grilling.
  6. Mix yogurt and pesto together in a bowl.
  7. Spread yogurt-pesto mix on the bottom of each bun, then top with chicken, corn mixture, and avocado.
