Ingredients

The chicken

  • 10-12 pieces boneless skinless chicken thighs

The marinade

  • 2 pieces green onions, minced
  • 2 cloves garlic, minced
  • ¼ cup toasted sesame oil
  • 3 tablespoons pure maple syrup
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon soy sauce or coconut aminos
  • ½ piece lime, juiced
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground white pepper

Optional garnish

  • to taste toasted sesame seeds
  • to taste chopped green onions

Instructions

  1. Combine all marinade ingredients except chicken in a bowl and stir until well mixed.
  2. Place chicken thighs in a non-reactive container and pour marinade over them, ensuring they are fully coated.
  3. Cover the container and refrigerate for at least 4 hours, preferably overnight.
  4. Preheat the grill to high heat and oil the grates if necessary.
  5. Place the chicken on the grill, presentation side down, and cook for about 5 minutes.
  6. Flip the chicken, spoon leftover marinade over each piece, and cook for another 3 to 5 minutes until cooked through.
  7. Remove chicken from the grill and garnish with green onions and sesame seeds before serving.
