Ingredients

The chicken

  • 4-6 pieces boneless skinless chicken breasts

The marinade

  • 1 cup finely chopped fresh Italian parsley
  • ¼ cup fresh lemon juice
  • ½ cup red wine vinegar
  • 2 teaspoons sesame oil
  • cup olive oil
  • 3 cloves garlic, finely minced
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Pound each piece of chicken to an even thickness of ¼ to ½ inch.
  2. Whisk together the marinade ingredients: parsley, lemon juice, red wine vinegar, sesame oil, olive oil, garlic, marjoram, thyme, oregano, salt, and pepper.
  3. Place the chicken in a baking dish or ziploc bag and pour the marinade over it, ensuring the chicken is coated.
  4. Refrigerate the chicken for at least 30 minutes and up to 2 hours.
  5. Preheat the grill to medium heat.
  6. Grill the chicken for about 3-4 minutes on each side or until cooked through, with an internal temperature of 165°F.
  7. Let the chicken rest for 5-10 minutes before slicing and serving.
