Ingredients

The potatoes

  • 1 ½ lbs fingerling potatoes

The seasoning

  • 1 tablespoon olive oil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon minced garlic

Instructions

  1. 1. Preheat the oven to 425°F and line a baking sheet with aluminum foil, spraying it with cooking spray.
  2. 2. In a mixing bowl, combine the halved potatoes with olive oil and stir to coat.
  3. 3. Add thyme, parsley, salt, pepper, and garlic to the potatoes and mix well.
  4. 4. Spread the coated potatoes in a single layer on the baking sheet.
  5. 5. Bake in the oven for 30-35 minutes until the edges are crisp and the centers are cooked through.
