The potatoes

  • 12 ounces fingerling potatoes

The seasoning

  • 1 tablespoon oil or duck fat or tallow
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 425º F.
  2. Toss the sliced fingerling potatoes with oil, duck fat, or tallow and salt.
  3. Place the potatoes cut side down on a baking sheet.
  4. Roast the potatoes for 30 minutes.
  5. Flip the potatoes over and cook for an additional 5 minutes.
