Ingredients

The potatoes

  • 1 lbs fingerling potatoes

The garlic butter

  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ tablespoon garlic powder
  • ½ teaspoon salt
  • 1 tablespoon parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Rinse the fingerling potatoes and pat them dry, then slice each potato in half horizontally.
  3. Heat an oven-safe skillet over medium heat, add melted butter and sauté the garlic.
  4. Add the potatoes to the skillet, stirring before incorporating garlic powder and salt.
  5. Transfer the skillet to the oven and roast for 20 minutes until golden brown and tender.
  6. If desired, top with chopped parsley and serve immediately.
