Instructions
- Preheat the oven to 400°F.
- Rinse, dry, and halve the potatoes lengthwise.
- In a large bowl, toss the potatoes with olive oil, minced garlic, ½ teaspoon of salt, thyme, and pepper.
- Transfer the potatoes cut-side-down to a baking sheet, ensuring they do not touch.
- Bake for 30 to 40 minutes, flipping twice during cooking.
- Once done, sprinkle with parsley, Parmesan (if using), and remaining ¼ teaspoon of salt, then serve hot.
