Ingredients

The potatoes

  • 1 ½ pounds fingerling potatoes

The seasoning

  • 2 ½ tablespoons extra virgin olive oil
  • 3 cloves minced garlic
  • ¾ teaspoon kosher salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper

Optional toppings

  • 2 tablespoons grated Parmesan
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Rinse, dry, and halve the potatoes lengthwise.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, ½ teaspoon of salt, thyme, and pepper.
  4. Transfer the potatoes cut-side-down to a baking sheet, ensuring they do not touch.
  5. Bake for 30 to 40 minutes, flipping twice during cooking.
  6. Once done, sprinkle with parsley, Parmesan (if using), and remaining ¼ teaspoon of salt, then serve hot.
