Ingredients

The potatoes

  • 1 pound fingerling potatoes

The seasoning

  • 3 tablespoons butter
  • 3 cloves garlic
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 2 teaspoons Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 tablespoon fresh parsley

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Cut the fingerling potatoes in half lengthwise.
  3. In a small bowl, combine melted butter, minced garlic, chopped rosemary, thyme, Italian seasoning, salt, and pepper.
  4. Toss the potatoes in the butter and herb mixture until evenly coated.
  5. Transfer the potatoes to a cast-iron skillet or an oven-safe baking dish.
  6. Bake for 25 minutes, flipping halfway through, until tender and crispy.
  7. Sprinkle with chopped parsley and serve hot.
