Instructions
- Preheat the oven to 425°F (218°C).
- Cut the fingerling potatoes in half lengthwise.
- In a small bowl, combine melted butter, minced garlic, chopped rosemary, thyme, Italian seasoning, salt, and pepper.
- Toss the potatoes in the butter and herb mixture until evenly coated.
- Transfer the potatoes to a cast-iron skillet or an oven-safe baking dish.
- Bake for 25 minutes, flipping halfway through, until tender and crispy.
- Sprinkle with chopped parsley and serve hot.
