Ingredients

Flours

  • 1 cup Almond Flour
  • 1 cup Coconut Flour
  • 1 cup Gluten Free Rolled Oats or Oat Flour
  • 1 cup Gluten Free Rice Flour
  • 1 cup 1:1 All Purpose Gluten Free Flour
  • 1 cup All Purpose Gluten Free Flour
  • 1 cup Gluten Free Flour Blend

Binders & Egg Replacers

  • 1 tbsp Arrowroot or Tapioca Starch
  • 1 tbsp Flaxseed or Chia Seed

Extra Components

  • ½ cup Nut or Seed Butter
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ cup Coconut Palm Sugar or Brown Sugar
  • ½ cup Granulated Sugar or Monk Fruit Sweetener
  • 1 tsp Salt
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the dry ingredients including the various flours, baking powder, baking soda, and salt.
  3. In another bowl, mix the wet ingredients including the nut or seed butter, sugars, and vanilla extract.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Scoop the dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are lightly browned.
  7. Allow the cookies to cool on a wire rack before serving.
