Ingredients

The meatballs

  • 2 oz fresh crustless bread crumbs
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp cardamom
  • 1 tsp salt
  • ½ tsp black pepper
  • Tbsp butter
  • cup finely chopped yellow onion
  • 1 clove minced garlic
  • ¼ cup milk
  • 2 large egg yolks
  • ¾ lb 85% lean ground beef
  • ¾ lb ground pork

The gravy

  • Tbsp all-purpose flour
  • 2 cups low-sodium beef broth
  • cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 Tbsp minced fresh parsley

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with aluminum foil and non-stick spray.
  2. In a mixing bowl, combine bread crumbs, nutmeg, allspice, cardamom, salt, and pepper. Add milk and let it rest.
  3. Melt 1 Tbsp of butter in a skillet, sauté onions until golden, then add garlic.
  4. Mix beef, pork, egg yolks, and the sautéed onion mixture into the bread crumb mixture.
  5. Shape the mixture into 1 oz meatballs and place them on the baking sheet.
  6. Bake the meatballs until cooked through, about 18-22 minutes.
  7. In the same skillet, melt remaining butter to make a roux with flour, then slowly whisk in broth and cream.
  8. Add Worcestershire sauce, season, and let the gravy thicken.
  9. Toss the baked meatballs in the gravy and serve with egg noodles or mashed potatoes.
