Ingredients

Meatballs

  • 2 pounds lean ground beef
  • 2 large eggs
  • 4 ounces onion, minced and sautéed until soft
  • ¼ cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Montreal Steak Seasoning
  • 1 tablespoon low carb brown sugar or your favorite sweetener
  • 1 teaspoon pure ground chipotle pepper seasoning
  • ½ teaspoon pepper
  • ¼ teaspoon salt
  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 2 tablespoons olive oil, divided

Gravy

  • 4 ounces cream cheese
  • 1 ½ cups unsalted beef broth
  • 1 cup heavy cream
  • 2 tablespoons brandy
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ¼ teaspoon salt
  • teaspoon pepper
  • to taste chopped parsley (for garnish)

Instructions

  1. Heat oil in a frying pan and sauté minced onions until soft.
  2. Mix all meatball ingredients in a bowl until combined and fluffy.
  3. Scoop and roll the mixture into balls, placing them on a foil-lined sheet pan.
  4. In the same pan, cook half of the meatballs, turning them until browned, then remove to the sheet pan.
  5. Repeat with the remaining meatballs.
  6. For the cream sauce, heat cream cheese in the microwave, then add brandy and beef broth to the pan, scraping up brown bits.
  7. Blend the sauce until smooth, then return to the pan and add cream, Worcestershire sauce, and Dijon mustard.
  8. Simmer until the sauce thickens, adjusting seasoning as needed.
  9. Serve meatballs with sauce, garnished with parsley.
