Ingredients

The Meatballs

  • ½ oz Pork rinds (crushed, ~1/4 cup)
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • ¼ tsp Allspice
  • ¼ tsp Nutmeg (optional)
  • ¼ cup Heavy cream
  • 1 large Egg
  • 3 tbsp Onion (grated, optional)
  • 1 lb Ground beef
  • 2 tbsp Olive oil (for frying)

The Sauce

  • 2 tbsp Unsalted butter
  • 1 cup Beef bone broth
  • ½ cup Heavy cream
  • 4 oz Cream cheese (cut into small chunks)

Instructions

  1. In a large bowl, combine crushed pork rinds, salt, pepper, allspice, and nutmeg if using.
  2. Whisk in heavy cream, egg, and grated onion if using.
  3. Mix in ground beef until just incorporated, being careful not to overmix.
  4. Form the mixture into 1-inch balls and place them on a baking sheet.
  5. Heat olive oil in a large pan over medium-high heat and fry meatballs in batches until browned and cooked through.
  6. Remove meatballs from the pan and keep warm.
  7. Wipe the pan clean, add butter, and melt over medium heat.
  8. Add beef bone broth and heavy cream, bring to a boil, then reduce heat and simmer until reduced by half.
  9. Lower the heat and stir in cream cheese until smooth, adjusting consistency with more cream or broth if needed.
  10. Return meatballs to the pan and coat with the sauce.
