Instructions
- In a large bowl, combine crushed pork rinds, salt, pepper, allspice, and nutmeg if using.
- Whisk in heavy cream, egg, and grated onion if using.
- Mix in ground beef until just incorporated, being careful not to overmix.
- Form the mixture into 1-inch balls and place them on a baking sheet.
- Heat olive oil in a large pan over medium-high heat and fry meatballs in batches until browned and cooked through.
- Remove meatballs from the pan and keep warm.
- Wipe the pan clean, add butter, and melt over medium heat.
- Add beef bone broth and heavy cream, bring to a boil, then reduce heat and simmer until reduced by half.
- Lower the heat and stir in cream cheese until smooth, adjusting consistency with more cream or broth if needed.
- Return meatballs to the pan and coat with the sauce.
