Instructions
- Heat 2 teaspoons of oil in a large frying pan over medium-high heat and sauté the minced onions until soft.
- Combine all meatball ingredients in a large bowl and mix until fully combined and fluffy.
- Scoop the meatball mixture using a tablespoon, roll into balls, and place on a foil-lined sheet pan.
- In the same pan, heat 2 teaspoons of oil and cook half of the meatballs, turning them until browned on all sides.
- Remove the cooked meatballs to the sheet pan and repeat with the remaining meatballs.
- For the cream sauce, heat cream cheese in the microwave for 1 minute, then add brandy and ¼ cup of beef broth to the pan.
- Scrape the brown bits from the pan, add cream cheese, and stir until melted.
- Blend the sauce with the remaining beef broth until smooth, then return to the pan.
- Add Worcestershire sauce and Dijon mustard, and simmer until the sauce thickens to your liking.
- Adjust seasoning and garnish with chopped parsley before serving.
