Instructions
- Steam the potatoes according to package directions, let them cool slightly, then slice in half.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken sausage and bell peppers, and sauté for 5-6 minutes until the sausage is lightly browned and the peppers are soft.
- Stir in half of the minced garlic, Italian seasoning, salt, and pepper, then transfer to a plate and set aside.
- Add the remaining tablespoon of olive oil to the skillet and sauté the potatoes for 4-5 minutes until lightly browned on each side.
- Stir in the remaining garlic, Italian seasoning, salt, and pepper, then mix in the cooked sausage and peppers to combine.
