Ingredients

The main ingredients

  • 1 ½ pounds baby potatoes
  • 12 ounces chicken sausage
  • 2 bell peppers
  • 4 cloves garlic

The seasonings

  • 1 ½ tablespoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The cooking oil

  • 2 tablespoons olive oil

Instructions

  1. Steam the potatoes according to package directions, let them cool slightly, then slice in half.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the chicken sausage and bell peppers, and sauté for 5-6 minutes until the sausage is lightly browned and the peppers are soft.
  4. Stir in half of the minced garlic, Italian seasoning, salt, and pepper, then transfer to a plate and set aside.
  5. Add the remaining tablespoon of olive oil to the skillet and sauté the potatoes for 4-5 minutes until lightly browned on each side.
  6. Stir in the remaining garlic, Italian seasoning, salt, and pepper, then mix in the cooked sausage and peppers to combine.
