Ingredients

The hash

  • 1 lb. chicken sausage, sliced
  • 2 tablespoons coconut oil
  • 5 large russet potatoes, small diced (about 3–4 cups)
  • 1 medium red bell pepper, diced
  • 1 cup red onion, diced
  • to taste salt & pepper

Optional

  • 1 over easy egg (optional, for serving)

Instructions

  1. 1. Heat a large non-stick skillet to medium high heat.
  2. 2. Add chicken sausage to the pan and sauté for 6-8 minutes until browned.
  3. 3. Remove the sausage from the pan and set aside.
  4. 4. Add coconut oil to the pan; once melted, add diced potatoes.
  5. 5. Sauté the potatoes for 15-17 minutes until slightly browned, seasoning with salt and pepper.
  6. 6. Add the diced peppers and onions to the pan and sauté for another 3-4 minutes.
  7. 7. Return the chicken sausage to the pan, toss everything together, and serve.
  8. 8. Optionally, serve with an over easy egg on top.
