Chicken Sausage Pepper Potato Hash

Instructions
- 1. Heat a large non-stick skillet to medium high heat.
- 2. Add chicken sausage to the pan and sauté for 6-8 minutes until browned.
- 3. Remove the sausage from the pan and set aside.
- 4. Add coconut oil to the pan; once melted, add diced potatoes.
- 5. Sauté the potatoes for 15-17 minutes until slightly browned, seasoning with salt and pepper.
- 6. Add the diced peppers and onions to the pan and sauté for another 3-4 minutes.
- 7. Return the chicken sausage to the pan, toss everything together, and serve.
- 8. Optionally, serve with an over easy egg on top.
