One Pan Roasted Potatoes, Sausage and Peppers

Ingredients

  • 1.5 lb potatoes, russet or new
  • 1 medium onion, peeled and quartered
  • 2 count red bell peppers
  • 2 tsp extra virgin olive oil
  • to taste kosher salt
  • to taste fresh cracked pepper
  • 1 tsp chopped rosemary
  • ½ tsp garlic powder
  • as needed olive oil spray
  • 1 lb Italian chicken sausage

Instructions

  1. Cut the potatoes into small 1" x ½" pieces for even cooking.
  2. Preheat the oven to 375°F.
  3. Spray a large non-stick baking sheet with olive oil spray.
  4. In a large bowl, combine potatoes, onions, peppers, olive oil, salt, pepper, rosemary, and garlic powder; mix well.
  5. Pour the mixture onto the prepared baking sheet and bake for 15 minutes.
  6. Toss the mixture to prevent sticking, then add the sliced sausage.
  7. Continue baking for 25-35 minutes, tossing occasionally, until the potatoes are cooked through.
