Chimichurri Steak Tacos

Ingredients

Marinade

  • 1 whole jalapeño
  • 1 handful cilantro
  • 5 cloves garlic
  • 2 limes juice
  • 1 orange juice
  • 2 tablespoons vinegar
  • 2 tablespoons Worcestershire sauce
  • ½ cup olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1 teaspoon pepper

For the Steak Tacos

  • 2-3 pounds flank steak
  • 10-12 pieces corn or flour tortillas
  • to taste none red onion
  • to taste none cotija cheese
  • to taste none cilantro
  • to taste none guacamole
  • to taste none chimichurri

Instructions

  1. Blend marinade ingredients until smooth, then marinate the steak in the mixture for 1 to 8 hours.
  2. Prepare the toppings while the steak marinates.
  3. Preheat the grill to medium heat, remove the steak from the marinade, and season with salt and pepper.
  4. Grill the steak for 7-9 minutes per side until it reaches the desired doneness, then let it rest for 5 minutes.
  5. Slice the steak against the grain and assemble the tacos with steak, chimichurri, cotija, cilantro, red onion, and guacamole.
