Ham and Bean Soup

Ingredients

  • 1 pound dried Great Northern beans
  • 1 cup leftover ham
  • 1 cup smoked turkey
  • ½ medium onion, chopped
  • 1 tablespoon minced garlic
  • 2-3 teaspoon minced fresh thyme
  • 2 pieces bay leaves
  • cup chopped celery
  • 1 teaspoon Creole seasoning
  • 3-4 cups unsalted chicken stock
  • 1 cup carrots, sliced thick
  • to taste salt and pepper
  • optional any bones from ham or turkey

Instructions

  1. Soak the dried beans in water for 6-8 hours or overnight, then drain and rinse.
  2. Place the soaked beans in a pot with about 5 cups of water and bring to a boil until tender.
  3. In a large dutch oven, heat and add chopped ham and smoked turkey, cooking until browned.
  4. Add onions, garlic, thyme, bay leaves, celery, and Creole seasoning, sautéing for 3-5 minutes.
  5. Pour in about 3 cups of chicken stock and add any bones, scraping the pot to deglaze.
  6. Add the beans and carrots, bring to a boil, then let it simmer until the sauce thickens, about 30-45 minutes.
  7. Adjust seasoning with salt and pepper and serve warm with bread.
