Ham and Bean Soup

Instructions
- Soak the dried beans in water for 6-8 hours or overnight, then drain and rinse.
- Place the soaked beans in a pot with about 5 cups of water and bring to a boil until tender.
- In a large dutch oven, heat and add chopped ham and smoked turkey, cooking until browned.
- Add onions, garlic, thyme, bay leaves, celery, and Creole seasoning, sautéing for 3-5 minutes.
- Pour in about 3 cups of chicken stock and add any bones, scraping the pot to deglaze.
- Add the beans and carrots, bring to a boil, then let it simmer until the sauce thickens, about 30-45 minutes.
- Adjust seasoning with salt and pepper and serve warm with bread.
