Ingredients

The cookie dough

  • ½ cup creamy peanut butter or sunbutter
  • ¼ cup palm shortening
  • ½ cup coconut sugar
  • 1 large egg
  • cups blanched almond flour
  • ½ teaspoon celtic sea salt

The filling

  • ½ cup raspberry jam

Instructions

  1. Cream together peanut butter, shortening, coconut sugar, and egg in a large bowl using a hand blender.
  2. Blend until smooth, then stir in almond flour and salt.
  3. Scoop the dough onto a parchment-lined baking sheet, 1 tablespoon at a time.
  4. Make a large thumbprint in the center of each cookie.
  5. Scoop 1 teaspoon of jam into the center of each cookie.
  6. Bake in a preheated oven at 350°F for 8-10 minutes.
  7. Cool the cookies and serve.
