Peanut Butter and Jelly Cookies

The filling
Instructions
- Cream together peanut butter, shortening, coconut sugar, and egg in a large bowl using a hand blender.
- Blend until smooth, then stir in almond flour and salt.
- Scoop the dough onto a parchment-lined baking sheet, 1 tablespoon at a time.
- Make a large thumbprint in the center of each cookie.
- Scoop 1 teaspoon of jam into the center of each cookie.
- Bake in a preheated oven at 350°F for 8-10 minutes.
- Cool the cookies and serve.
