Peanut Butter Cookie Sandwiches

The filling

Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a bowl, mix together peanut butter, melted coconut oil, and coconut sugar.
- Add in the egg and vanilla, mixing well.
- Gradually mix in the almond flour, one cup at a time, followed by the salt.
- Scoop about 1.5 tablespoons of dough onto the baking sheet and flatten them.
- Bake for 13-15 minutes and allow to cool completely.
- While the cookies are baking, mix the filling ingredients together.
- Spoon about 1 tablespoon of filling onto one cookie and sandwich it with another.
