Ingredients

The cookies

  • 1 ¼ cup natural peanut butter
  • ¼ cup coconut oil, melted
  • ¾ cup coconut sugar
  • 1 large egg
  • 1 tsp vanilla
  • 2 cups almond flour
  • ¼ tsp salt

The filling

  • ¾ cup natural peanut butter
  • ¼ cup maple syrup
  • 2 Tbsp melted coconut oil
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a bowl, mix together peanut butter, melted coconut oil, and coconut sugar.
  3. Add in the egg and vanilla, mixing well.
  4. Gradually mix in the almond flour, one cup at a time, followed by the salt.
  5. Scoop about 1.5 tablespoons of dough onto the baking sheet and flatten them.
  6. Bake for 13-15 minutes and allow to cool completely.
  7. While the cookies are baking, mix the filling ingredients together.
  8. Spoon about 1 tablespoon of filling onto one cookie and sandwich it with another.
