Pan-Seared Lamb Chops with Spicekick® Curry Sauce

The Lamb

lamb chops (4 large or 8 small)

Instructions
- Toast the Curry seasoning in a small-medium saucepan on medium heat for about 30 seconds.
- Add the tomato paste and stir for about 1 minute, then pour in the coconut milk and whisk until smooth.
- Simmer the sauce on low while preparing the lamb.
- Season the lamb chops with salt and pepper on all sides.
- Heat a large skillet on medium-high heat and add the cooking oil.
- Once the oil is shimmering, add the lamb chops and brown for about 5 minutes on one side.
- Flip the lamb and brown the other side until it reaches medium rare (about 130°F).
- Plate the sauce, add cooked orzo if desired, and top with the lamb chops, garnishing with fresh herbs.
