Pan-Seared Lamb Chops with Spicekick® Curry Sauce

Ingredients

The Sauce

  • 1 packet Spicekick® Curry seasoning mix
  • 1 6-oz can tomato paste
  • 1 13-oz can coconut milk (or coconut cream)
  • to taste fresh chopped herbs (mint, parsley, or chives)

The Lamb

  • 4 servings lamb chops (4 large or 8 small)
  • to taste salt
  • to taste freshly ground black pepper
  • 2 teaspoons cooking oil (canola or avocado oil)

Instructions

  1. Toast the Curry seasoning in a small-medium saucepan on medium heat for about 30 seconds.
  2. Add the tomato paste and stir for about 1 minute, then pour in the coconut milk and whisk until smooth.
  3. Simmer the sauce on low while preparing the lamb.
  4. Season the lamb chops with salt and pepper on all sides.
  5. Heat a large skillet on medium-high heat and add the cooking oil.
  6. Once the oil is shimmering, add the lamb chops and brown for about 5 minutes on one side.
  7. Flip the lamb and brown the other side until it reaches medium rare (about 130°F).
  8. Plate the sauce, add cooked orzo if desired, and top with the lamb chops, garnishing with fresh herbs.
