Waldorf Salad with Yogurt Dressing

The salad

cooked chicken breasts, cut into bite size chunks

Granny Smith apple, cored and diced

celery, sliced

red seedless grapes, cut in half

chopped raw walnuts

organic raisins
The dressing
-
½
cup
plain Greek yogurt, or paleo mayo, or a combination of both

clove
garlic, minced
-

raw honey, melted

Dijon mustard

apple cider vinegar

tbsp
chopped fresh thyme

Himalayan salt

ground white pepper

leafy greens or shredded lettuce, to serve
Instructions
- Toast the walnuts in a dry pan over medium-low heat for about 5 minutes until fragrant and slightly golden.
- Make the dressing by mixing all dressing ingredients in a small bowl until well combined and creamy.
- Prep the salad ingredients and place them in a large mixing bowl.
- Add the dressing to the salad ingredients and toss gently to coat.
- Serve immediately as is or over leafy greens or shredded lettuce.
