Waldorf Salad with Yogurt Dressing

Ingredients

The salad

  • 2 large cooked chicken breasts, cut into bite size chunks
  • 1 each Granny Smith apple, cored and diced
  • 2 ribs celery, sliced
  • 1 cup red seedless grapes, cut in half
  • ¼ cup chopped raw walnuts
  • 2 tbsp organic raisins

The dressing

  • ½ cup plain Greek yogurt, or paleo mayo, or a combination of both
  • 1 clove garlic, minced
  • 2 tbsp raw honey, melted
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tbsp chopped fresh thyme
  • ½ tsp Himalayan salt
  • ¼ tsp ground white pepper

Optional

  • to taste leafy greens or shredded lettuce, to serve

Instructions

  1. Toast the walnuts in a dry pan over medium-low heat for about 5 minutes until fragrant and slightly golden.
  2. Make the dressing by mixing all dressing ingredients in a small bowl until well combined and creamy.
  3. Prep the salad ingredients and place them in a large mixing bowl.
  4. Add the dressing to the salad ingredients and toss gently to coat.
  5. Serve immediately as is or over leafy greens or shredded lettuce.
