Ingredients

The salad

  • 2 cups cooked chicken breast, chopped
  • 1 medium apple, chopped
  • 1 stalk celery, cut into small pieces
  • 1 cup red seedless grapes, cut in half
  • 2 tablespoons chopped walnuts
  • 3 tablespoons fresh chopped chives, thinly sliced
  • 2 tablespoons finely chopped parsley
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 head butter lettuce, leaves separated

The dressing

  • ½ cup low-fat Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • ½ tablespoon honey

Instructions

  1. In a small bowl, mix together the Greek yogurt, mayonnaise, lemon juice, and honey, then set aside.
  2. In a large bowl, combine the chicken, apple, celery, grapes, walnuts, chives, parsley, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is evenly coated.
  4. Serve the salad in butter lettuce cups.
