Chicken Waldorf Salad

Ingredients

The salad

  • 9 oz leftover cooked chicken, cut into 1" cubes
  • 1 unit avocado, diced
  • 25-30 unit red grapes, cut in half
  • 1 unit red apple, diced
  • 1 rib celery, sliced
  • 1 oz pecans, chopped
  • ¼ cup fresh parsley, chopped
  • to taste unit leafy greens to serve

The dressing

  • ½ cup sour cream or plain Greek yogurt
  • 2 oz soft unripened goat cheese
  • 1 tbsp milk of your choice
  • 1 tbsp unpasteurized honey
  • 1 tbsp fresh rosemary, chopped
  • ½ tsp pure vanilla extract
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Combine the cooked chicken, diced avocado, red grapes, apple, celery, pecans, and parsley in a large mixing bowl.
  2. In a small food processor, blend sour cream, goat cheese, milk, honey, rosemary, vanilla, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately over a bed of leafy greens or refrigerate for a couple of hours to allow flavors to meld.
