Chicken Waldorf Salad

The salad

cooked and diced chicken breast or thighs

Gala, Fuji, or Honeycrisp apple, cored and cut into ½-inch dice

halved red seedless grapes

celery stalk, thinly sliced

head
butter lettuce or romaine lettuce

minced fresh tarragon, chives, chervil, or Italian parsley

toasted walnuts
The dressing

Paleo mayonnaise

teaspoon
Dijon mustard

lemon juice

freshly ground black pepper

Instructions
- Combine diced apples and lemon juice in a small bowl and toss well.
- In a large bowl, whisk together mayonnaise and mustard until uniform.
- Add cubed chicken, acidulated apples, grapes, celery, and tarragon to the large bowl and mix well.
- Taste for seasoning and add salt and pepper as needed.
- Serve the mixture on a bed of lettuce.
- Top with toasted walnuts just before serving.
