Waldorf Salad

Ingredients

The dressing

  • ¼ cup Greek yogurt
  • ¼ cup mayonnaise
  • 2-3 tablespoons sugar or honey
  • ¼ teaspoon salt

The salad

  • 1 cup pineapple, diced
  • 2 Fuji apples cored and chopped
  • 1 cup red seedless grapes, sliced in half
  • 1 cup celery, thinly sliced
  • 1 cup chopped walnuts or pecans
  • to taste lettuce (optional)

Instructions

  1. Mix the Greek yogurt, mayonnaise, sugar, and salt in a medium bowl until smooth.
  2. In a larger bowl, combine the diced pineapple, apples, grapes, celery, and walnuts.
  3. Pour the mayonnaise mixture over the fruit and nut mixture and stir to coat well.
  4. Chill the salad in the fridge for at least an hour.
  5. Serve the salad in a bowl or on a bed of lettuce.
