Ingredients

The peppers

  • 8 ounces shishito peppers

The seasoning

  • 2 teaspoons extra-virgin olive oil or avocado oil
  • 1 wedge lemon (optional)
  • to taste salt (preferably flaky sea salt or kosher salt)

Instructions

  1. Rinse and dry the shishito peppers, then toss them in oil until evenly coated.
  2. Preheat a skillet over medium heat until hot enough for a drop of water to sizzle.
  3. Add the peppers to the skillet and cook, stirring every minute, for about 8 to 12 minutes until tender and charred.
  4. Transfer the peppers to a serving plate, spritz with lemon if desired, and sprinkle with salt before serving.
