Grits Smothered with Mustard Greens

Ingredients

The grits

  • 3 cups water
  • 1 cup uncooked corn grits
  • 1 cube reduced sodium vegetable bouillon
  • ¾ cup plant-based milk

The sauté

  • 1 tablespoon extra virgin olive oil
  • 1 large onion, diced
  • 2 medium garlic cloves, minced
  • 1 pinch cayenne pepper
  • 1 teaspoon celery salt
  • ½ teaspoon dry mustard
  • 2 bunches mustard greens, coarsely chopped
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Boil water in a small pot, then reduce heat and stir in grits and bouillon, cooking for 6 minutes.
  2. Add plant-based milk to the grits and cook for another 2 minutes before removing from heat.
  3. In a skillet, heat olive oil and sauté onion for 3 minutes, then add garlic, cayenne, celery salt, and mustard, cooking for an additional 3 minutes.
  4. Add mustard greens to the skillet and cook until wilted, about 4 to 5 minutes.
  5. Pour grits into a serving dish, top with cooked greens, and sprinkle with sesame seeds.
