Vegetarian Mustard Greens

Ingredients

The greens

  • 1 lb. fresh mustard greens, stemmed and cut

The base

  • 1 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 cups vegetable broth

The seasonings

  • ½ Tbsp smoked paprika
  • ½ Tbsp sugar
  • to taste freshly cracked pepper
  • 1 pinch crushed red pepper (optional)

Instructions

  1. Prepare the mustard greens by removing the stems and cutting the leaves into 2-inch strips, then rinse them well.
  2. Slice the onion thinly and mince the garlic, then sauté them in a large pot with olive oil until the onions are soft.
  3. Add the vegetable broth to the pot and heat until it starts steaming.
  4. Gradually add the mustard greens, stirring until they wilt before adding more.
  5. Once all the greens are in the pot, add the smoked paprika, sugar, cracked pepper, and red pepper flakes if using.
  6. Cover the pot and let it simmer on medium-low heat for at least 30 minutes, adjusting seasoning as needed.
  7. Serve the greens with a slotted spoon to drain excess broth.
