Vegetarian Mustard Greens

Instructions
- Prepare the mustard greens by removing the stems and cutting the leaves into 2-inch strips, then rinse them well.
- Slice the onion thinly and mince the garlic, then sauté them in a large pot with olive oil until the onions are soft.
- Add the vegetable broth to the pot and heat until it starts steaming.
- Gradually add the mustard greens, stirring until they wilt before adding more.
- Once all the greens are in the pot, add the smoked paprika, sugar, cracked pepper, and red pepper flakes if using.
- Cover the pot and let it simmer on medium-low heat for at least 30 minutes, adjusting seasoning as needed.
- Serve the greens with a slotted spoon to drain excess broth.
