Ingredients

The base

  • 4 cups milk
  • 1 cup water
  • ¼ teaspoon salt
  • 1 cup old-fashioned grits
  • 2 tablespoons butter

To taste

  • to taste freshly ground black pepper

Instructions

  1. In a medium saucepan, bring the milk, water, and ¼ teaspoon salt to a boil over medium-high heat.
  2. Whisk in the grits in a steady stream while constantly whisking to prevent clumps.
  3. Cover and reduce heat to medium-low, cooking while stirring constantly until grits are thick and creamy, about 15 minutes.
  4. Remove from heat and stir in the butter.
  5. Season to taste with salt and freshly ground black pepper, then serve warm.
