Ingredients

The base

  • 6 cups water
  • 2 cups half and half
  • teaspoons kosher salt
  • ¼ teaspoon freshly ground pepper
  • 2 cups quick cooking grits

The mix-ins

  • 1 cup extra sharp cheddar cheese, shredded
  • 4 tablespoons salted butter, cubed
  • 1 cup real bacon pieces
  • ½ cup green onions, finely chopped (optional)

Instructions

  1. Combine water, half and half, salt, and pepper in a large saucepan and bring to a boil.
  2. Slowly whisk in the grits while continuously stirring to prevent splattering.
  3. Reduce heat to low and cook for 10 minutes, whisking frequently.
  4. Remove from heat and stir in the cheddar cheese until melted.
  5. Add the cubed butter and stir until smooth.
  6. Mix in the bacon and optional green onions.
  7. Serve immediately, garnished with additional green onions or cheese if desired.
