The base

The finishing touches

  • 3-4 tablespoons unsalted butter
  • 1-2 cups white sharp cheddar cheese

Instructions

  1. 1. Combine water, milk, bay leaf, and salt in a heavy saucepan and bring to a boil.
  2. 2. Gradually whisk in the grits, stirring continuously to prevent lumps.
  3. 3. Reduce heat and simmer, covered, stirring frequently, until thickened, about 15 minutes.
  4. 4. Remove from heat and stir in butter and cheese until melted.
  5. 5. Serve hot, optionally topped with Cajun shrimp and sauce.
