Instructions
- 1. Combine water, milk, bay leaf, and salt in a heavy saucepan and bring to a boil.
- 2. Gradually whisk in the grits, stirring continuously to prevent lumps.
- 3. Reduce heat and simmer, covered, stirring frequently, until thickened, about 15 minutes.
- 4. Remove from heat and stir in butter and cheese until melted.
- 5. Serve hot, optionally topped with Cajun shrimp and sauce.
