Ingredients

The base

  • 2 cup water
  • 3 cup milk
  • 1 bay leaf bay leaf
  • to taste salt and pepper
  • 1 cup quick-cooking grits

The flavorings

  • 3-4 tablespoon unsalted butter
  • 1-2 cup sharp cheddar cheese
  • 1 cup smoked Gouda

Instructions

  1. 1. In a heavy saucepan, combine water, milk, bay leaf, and salt; bring to a boil.
  2. 2. Gradually whisk in the grits, stirring continuously to prevent lumps.
  3. 3. Reduce heat and simmer, covered, stirring frequently until thickened (10-15 minutes).
  4. 4. Remove from heat and stir in butter and cheese until melted.
  5. 5. Serve hot, topped with additional cheese and butter if desired.
