Cheese Grits

grits (stone-ground or quick)

half and half or heavy cream or milk, divided

Instructions
- 1. For quick grits, bring water to a boil in a large saucepan, then stir in grits and salt.
- 2. Reduce heat, cover, and cook for about 5 minutes, stirring occasionally until thickened.
- 3. Stir in butter and ¼ cup of half and half, then gradually add the remaining half and half while stirring.
- 4. Taste and adjust salt if needed, then stir in shredded cheese until melted.
- 5. For stone-ground grits, bring salted water and butter to a boil, then slowly add grits, stirring constantly.
- 6. Add salt, cover partially, and simmer for about 15 minutes, stirring occasionally.
- 7. Stir in remaining butter and ¼ cup of half and half, then gradually add the remaining half and half while stirring.
- 8. Taste and adjust salt if needed, then stir in shredded cheese until melted.
