Ingredients

The Grits

  • 4 cups water
  • 1 cup grits (stone-ground or quick)
  • ½ teaspoon salt

The Mix-ins

  • 4 tablespoons unsalted butter
  • ½ cup half and half or heavy cream or milk, divided
  • 1 ½ cups shredded cheese

Instructions

  1. 1. For quick grits, bring water to a boil in a large saucepan, then stir in grits and salt.
  2. 2. Reduce heat, cover, and cook for about 5 minutes, stirring occasionally until thickened.
  3. 3. Stir in butter and ¼ cup of half and half, then gradually add the remaining half and half while stirring.
  4. 4. Taste and adjust salt if needed, then stir in shredded cheese until melted.
  5. 5. For stone-ground grits, bring salted water and butter to a boil, then slowly add grits, stirring constantly.
  6. 6. Add salt, cover partially, and simmer for about 15 minutes, stirring occasionally.
  7. 7. Stir in remaining butter and ¼ cup of half and half, then gradually add the remaining half and half while stirring.
  8. 8. Taste and adjust salt if needed, then stir in shredded cheese until melted.
