Ingredients

  • 1 bar good-quality semi-sweet chocolate (62% Scharffen Berger)
  • 3 cups organic cane sugar
  • ¾ cup unsalted butter
  • cup lite coconut milk
  • 7 ounces Ricemellow Crème (or marshmallow crème of choice)
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Butter a 13x9 baking dish or line it with parchment paper.
  2. Finely chop the chocolate bar and set aside.
  3. In a thick-bottomed medium-large saucepan, combine sugar, butter, and coconut milk.
  4. Slowly bring the mixture to an active boil while stirring constantly.
  5. Continue boiling for five minutes over medium heat until it reaches about 235°F.
  6. Remove from heat and stir in the chopped chocolate until melted.
  7. Add the Ricemellow Crème, vanilla, and nuts (if using) and mix well.
  8. Pour the fudge into the prepared baking dish and let it cool.
  9. After about 5 minutes, use a spatula to create a swirl texture on top (optional).
  10. Let it set at room temperature or refrigerate overnight for easier slicing.
