Ingredients

Dressing

  • 3 tbsp tahini
  • 1 ½ tbsp extra virgin olive oil
  • 2 tbsp pure maple syrup
  • 2 tbsp water
  • ½ lemon juiced
  • 2 tsp apple cider vinegar
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • ½ tsp salt
  • to taste freshly ground black pepper

Salad

  • 2 15oz cans chickpeas, drained and rinsed
  • ½ cup chopped green onions
  • ½ bunch cilantro, chopped
  • 1 bell pepper chopped
  • ½ cup raisins
  • cup cashews, chopped

Instructions

  1. Whisk together all dressing ingredients in a small bowl or blend them in a blender.
  2. Place salad ingredients in a large bowl.
  3. Add dressing to the salad and toss to combine.
  4. Enjoy the salad at room temperature or chilled.
