Ingredients

  • 1 ½ cups cooked chickpeas
  • ¼ cup vegan mayonnaise
  • 2 tablespoons red onion, roughly chopped
  • 2 tablespoons fresh parsley or dill
  • 2 tablespoons finely chopped pickles or relish or celery
  • 1 tablespoon curry powder
  • 3 tablespoons raisins
  • 1 squeeze lime
  • ½ teaspoon dijon mustard
  • to taste sea salt and pepper

Instructions

  1. Combine all ingredients in a bowl.
  2. Use a potato masher, fork, or pastry cutter to blend until just combined, ensuring chickpeas are broken down but not mushy.
  3. Taste and adjust seasonings as needed.
  4. Serve on greens, in a wrap, sandwich, or as a dip.
