chickpeas

chopped cilantro

finely chopped red onion
Instructions
- Prepare the dressing by mixing yogurt, Dijon mustard, honey, curry powder, and salt.
- Rinse and drain the chickpeas.
- Chop the cilantro and finely chop the red onion, soaking the onion in cold water if desired.
- Combine the chickpeas, cilantro, red onion, and dressing in a bowl.
- Stir to combine and adjust seasoning to taste.
- Serve cold.
