Curry Chickpea Salad Wraps

The wraps

fresh spinach, loosely packed
Instructions
- Combine chickpeas, mayonnaise, garam masala, turmeric, salt, black pepper, lime juice, and optional hot sauce in a mixing bowl and stir to combine.
- Mash the chickpeas with a potato masher or fork until mostly broken down, leaving some whole pieces if desired.
- Stir in the red onion, bell pepper, carrot, cashews, and cilantro.
- To assemble the wraps, place ½ cup of spinach in the center of a tortilla, add ½ cup of the chickpea salad, and layer with additional toppings if desired.
- Fold the edges of the tortilla and roll it into a burrito shape. Enjoy!
