Ingredients

The salad

  • 2 cans chickpeas, drained and rinsed
  • ¼ cup mayonnaise
  • ½ teaspoon garam masala
  • ¼ teaspoon turmeric
  • ¼ teaspoon salt
  • to taste freshly ground black pepper
  • 1 tablespoon fresh lime juice
  • 1 teaspoon hot sauce (optional)
  • ½ cup finely diced red onion
  • ½ cup finely diced red bell pepper
  • ¼ cup finely diced carrot
  • ¼ cup roasted cashews
  • 2 tablespoons freshly chopped cilantro

The wraps

  • 5 whole wheat wraps
  • cups fresh spinach, loosely packed

Instructions

  1. Combine chickpeas, mayonnaise, garam masala, turmeric, salt, black pepper, lime juice, and optional hot sauce in a mixing bowl and stir to combine.
  2. Mash the chickpeas with a potato masher or fork until mostly broken down, leaving some whole pieces if desired.
  3. Stir in the red onion, bell pepper, carrot, cashews, and cilantro.
  4. To assemble the wraps, place ½ cup of spinach in the center of a tortilla, add ½ cup of the chickpea salad, and layer with additional toppings if desired.
  5. Fold the edges of the tortilla and roll it into a burrito shape. Enjoy!
